The Schaunudlerei
Delicacies that are made by hand are rare enough these days. And being able to watch them being made live is a unique experience.
The “Schaunudlerei” in the Norische Nudelwerkstatt in Guttaring makes this possible. During guided tours, you can experience how regional, natural raw materials are made into “Kasnudln” – probably the most typical of all Carinthian specialties – without any chemical additives. Including, of course, the original sealing technique for these dumplings: The “Krendeln”!
The film, which is shown beforehand in the “Nudlkino”, shows the care with which the raw material suppliers from the region and the producers themselves go about their work. And, of course, a tasting awaits visitors as a fitting finale. A culinary delight with an awareness-raising effect.
Learning “Grandln” in the Schnaunudlerei
“A woman who can’t “grandln” can get married!” says an old Carinthian proverb. Which means that a woman who can’t “grandln” is not allowed to marry!
But what exactly is this “grandln”? By “grandln” we Carinthians mean a special technique for sealing the genuine Carinthian cheese noodle so that the curd filling remains in the noodle.

40 different types of pasta
Walter Kuss, the boss of the Norische Nudelwerkstatt, has been addicted to Carinthian pasta since his childhood. The business was opened in 2002, expanded in 2012 and, since spring 2018, has been developed into a unique experience production facility with a show pasta shop and pasta cinema.
“We started with four employees, today we have 24,” says “Mr. Kasnudl”, illustrating the growth of his pasta workshop. Today, the company produces 13,000 pieces a day – in over 40 different varieties: From original Carinthian Kasnudln with curd cheese filling to meat, tomato mozzarella or garlic noodles and new creations such as Bergsteigernudln (with a filling of smoked and mountain cheese) or wok vegetable noodles.
There are also lactose- or gluten-free variants, as well as vegan pasta or pasta made from spelt dough.
Buy fresh or frozen
All products are sold in the Nudlwerkstatt’s own store or in the self-service hut right next to the manufactory, fresh or frozen as required. The pasta can also be ordered online and delivered. The store also sells other gourmet products such as quality wines, chocolate, oils, jams, etc.
